  12. For Rice
  13. 1 cup cooked rice
  14. 1 tbsp butter
  15. 4-5 cloves garlic, chopped
  16. 1 onion chopped
  17. 1/2 cup boiled sweet corn
  18. 1/2 tsp roasted cumin seeds powder
  19. 2/2 tsp red chilli powder
  20. 1/2 tsp mexican seasoning
  21. to taste Salt
  22. For Paneer -
  23. 100 gm Paneer cubes
  24. 1/2 tsp red chilli powder
  25. 1/2 tsp roasted cumin seeds powder
  26. as per taste Salt
  27. For Salsa -
  28. 1 small tomato, chopped
  29. 1 small onion chopped
  30. 2 tbsp coriander leaves chopped
  31. 1 tbsp tomato ketchup
  32. to taste Salt
  33. 2 Maida roti wrap
  34. 2 tbsp grated cheese

Steps to make to make Mexican Veg Burritoes

  1. For Rajma Spread -
    Arrenge all mentioned Rajma spread ingredients.
  2. Heat a kadai pour oil add cumin seeds, chopped garlic, onion, tomato and saute then add boiled rajma and cook 2-3 mins.
  3. Now add red chilli powder, mexican seasonig, salt and little water, cook another 5 minutes. Then turn off the flame, transfer the mixture in a plate for cooling. Then grind the mixture, make a thick paste, keep aside.
  4. For Rice -
    Arrenge all mentioned ingredients.
  5. Heat butter in a kadai add chopped garlic, onion, boiled corn and mixed it then add roasted cumin seeds I, red chilli powder, mexican seasoning and mix it well.
  6. Then add rice, salt and mix it well and keep aside.
  7. For Paneer -
    Arrenge all mentioned ingredients.
  8. Heat butter in a kadai add Paneer and fry with red chilli powder, roasted cumin seeds powder, salt and keep aside.
  9. For Tomato Salsa -
    Arrenge all mentioned ingredients.
  10. Take a mixing bowl add chopped onion, tomato, green chilli, coriander leaves, salt and tomato ketchup, mix it well and keep aside.
  11. To Make Burrito Roll -
    Arrange all mentioned ingredients. Take a plate, place a maida roti wrap on it, now spread the rajma mixture paste over the roti wrap.
  12. Now place rice on the lower part of the roti then paneer, salsa mixture one by one.
  13. Then place some grated chees and coriander leaves on top.
    Now first fold burrito from sides then lower part of the roti and roll it tightly as shown in pic.
  14. To Grill Burrito -
    Heat up the pan, pour some oil on it. Place burrito on the pan, keeping folded side down and brush some oil on it. Flip the sides when it is nicely grilled.
  15. Now serve hot Mexican Burrito with Salsa.
