- Place the dough in a greased bowl and cover with clingfilm and let it rest for an hour.
- In a small bowl mix together the cinnamon and sugar. Set aside.
- Roll the dough on a floured surface to 35cm by 20cm approximately.
- Spread the butter over the dough. Then sprinkle with the cinnamon sugar.
- Roll the dough as tightly as you can and cut into 12-14 even rolls.
- Grease a 20cm by 20cm tray approximately and place the rolls in the tray.
- Tightly cover the tray with clingfilm and allow to proof for 90 minutes in a warm place.
- Once the rolls have doubled in size preheat oven to 190c and bake for around 25 minutes-30 minutes. If the top is getting browned too quickly cover loosely with foil.
- While it's baking make the icing. Whisk together the icing sugar, vanilla and expresso. Set aside.
- Once the rolls are cooked, remove them from the oven and drizzle with the icing.
